Key Specs
Material:** Wrought Iron
Diameter:** 18 cm
Includes:** Frying Pan, Lid
Coating:** None. The pan ships with a temporary, food-safe plant-based anti-rust film that should be washed off before first use.
How to Use
This pan requires seasoning and proper care to perform at its best. It is not non-stick out of the box.
1. **Initial Preparation:** Before your first use, wash the pan thoroughly with warm water and a small amount of dish soap to completely remove the factory-applied anti-rust film.
2. **Seasoning:** Dry the pan completely on the stovetop over low heat. Apply a very thin layer of a high-smoke-point cooking oil (like grapeseed or canola oil) to the entire interior surface. Heat the pan over medium heat until it begins to smoke lightly, then remove it from the heat and allow it to cool.
3. **Building the Patina:** The non-stick properties will develop as you cook. With each use, the oils from your cooking will polymerize and bond to the iron, creating a smooth, slick surface known as a patina.
Care & Safety
Preventing Rust:** Iron will rust if exposed to moisture for extended periods. This is a normal chemical reaction. To prevent it, always dry your pan immediately and thoroughly after washing. You can place it on a warm burner for a minute to ensure all moisture has evaporated.
Cleaning:** After cooking, clean the pan while it is still warm. Use a soft sponge or brush. Avoid using harsh steel wool or abrasive cleaners that can strip away the seasoning you’ve worked to build.
Storage:** After washing and drying, wipe a very thin layer of cooking oil on the interior surface before storing. This protects the iron from humidity and prevents rust.
Notes
As the manufacturer states, it's important to understand the nature of this classic cookware: "The Sori Yanagi pan is an uncoated frying pan."
